Zucchini and Oyster Fritters

These are delicious and a treat for all. Fantastic as a light meal. You may even convert the other side with this recipe.

  • 4 eggs
  • 4 tbsp Flour
  • Salt & Pepper
  • 4 zucchini grated
  • 3 Doz Mahurangi Oysters chopped into pieces
  • 4 tbsp of fresh flat leaf parsley chopped
  • 2 Spring onions finely chopped
  • Olive oil

Mix flour with salt and pepper. Beat eggs and then add to the flour mixture. Add the parsley, oysters, spring onions and zucchini and mix well. Let stand for ten minutes.

Heat oil a heavy based frying pan and cook a tablespoon at a time over medium heat until golden brown on each side. Keep warm. Serve with lemon wedges.
